What is actually in my photo?

A phone writes an EXIF block beside the picture: the make and model, the lens, the exposure, the moment the shutter opened, and — if location was on — the latitude and longitude to a few metres. Editing software adds its own name, and often an IPTC or XMP block with a copyright line. None of it is visible when you look at the photo.

Does removing it change the picture?

No. The image data is copied across byte for byte, so it is not a re-encode and there is no quality loss. The colour profile is kept for the same reason — removing that would change how the photo looks.

Do social networks not strip this already?

Most do, on upload. Email attachments, cloud folders, marketplace listings and file-upload forms usually do not, and those are the places a photo tends to travel with its coordinates attached.

Why is my photo sideways afterwards?

Some cameras store the image rotated and record the correction as an EXIF orientation tag. Removing EXIF removes that tag too. The tool warns you when a file relies on it, so you can rotate the photo first.
