How well does it detect tables?

Well on ruled tables and consistent columns. Merged cells, multi-line rows and tables without gridlines are where it struggles — check the result before using the numbers.

Why did my table come out in one column?

The table had no real column separators — the text merely looked aligned. Tables drawn with rules convert well; tables spaced with tabs are guesswork for any tool.
